I feel very strongly that what we eat affects us body & mind.  We need to get control of our eating habits.  People call things a "treat" but really?  what are you treating?  Think about the long term effects of the food you are eating.  Add just 1 veggie per meal or per day then after you are used to it add another.  My goodness you will start craving the good stuff for sure!!

Act of Valor (The movie)

My hubby & I had a date night this weekend & saw "Act of Valor".  Normally I don't like to see rated R, shoot'em up movies but this one was different.  While I still didn't like the language & blood it was different some how knowing this stuff really does happen.  There are men & women somewhere fighting for our freedoms.  They put themselves in the places they are in.  They are intelligent, strong, selfless people.  Leaving their families to protect us.  It really was an incredible movie.   NOT a chick-flick at all.  I'm sure you figured that out.

The theater was next to empty.  Maybe 6 total.  I'm thinking it was because of that other big movie out right now.  Some little thing called "The Hunger Games".  :)  We don't get out very often to see movies.  It's so expensive so we usually wait until we can get it in the bargain bin at the local Walmart.  This was worth the money spent for sure.

Here I am!




I took a little hiatus I think.  Not meaning to really.  Baseball season in our house has picked up double time.  I have an almost 17yr old on the high school varsity team & a 13 yr old with a travel ball team.  My little princess has yet to join anything in particular.  Not sure if we could run in another direction right now.  Good thing we have unlimited texting!  My hubby & I text back & forth about the games & who is doing what.  He helps coach our younger son's team. 

So, a couple weeks ago I noticed a couple things happening with me that just weren't normal.  The worst of it was some serious fatigue.  So, I decided to cut my mega every day workouts in half.  Can I say it was VERY hard.  I have even been taking 1 extra day a week off working out.  That's 2 days off and that is just wrong (to me anyway).  This week I started picking things up a bit but not to that level I was at.  I also took today off & will take my usual Sunday off as well.  I did see my P.A about it and she is helping me to figure this all out.  I do realize it's important to do things in moderation.  My PA Zoe said "Pamela - life is short".  While I SO enjoy working out I realize there are other things I can do for exercise that will be fun for me & my kids. 

On another note.  Easter is almost here!!  I love this time of year.  Even in Florida, God's creation is slowly changing & spring is definitely here.  Actually I think summer snuck in while we weren't watching.  I so enjoy the Easter songs at church & the stark contrast from Good Friday to Easter Sunday. 

What about you?  Looking forward to Easter?  What are some of your traditional foods you have at Easter time?  This year I'm thinking ham (for those carnivores), scalloped pots, baby carrots, salad & something else green.  My princess asked for an egg cake.  Need to do some research on that one!!

A YUMMY guilt-free Blondie recipe

Ok, I KNOW I have shared this blog with you before but I can't say enough about it.  I do love my desserts and with all my allergies & things I just stay away from this blog is quite helpful.  Chocolate Covered Katie is VERY good at what she does.  Today I was blessed to celebrate a little boys 1st birthday & I KNEW I would feel left out in the sweet department come cake time.  So, I perused Katies blog for something yummy that I had ingredients on hand for.  Here is it.  Me oh my it was yummy.  I wish I had pictures but honestly?  They didn't last that long at all.  I was shocked the people who tried them & ENJOYED them (you know those manly men that don't eat chickpeas or vegan stuff ).  It wasn't until after they tried them that I told them the ingredients.  (a little trick I did with my family when they were younger.) 

I made mine with carob chips.  I have a son that doesn't do chocolate.  He liked them.  (Hey Mikey! heehee)

Genius Blondies
(makes 15-20 squares)
  • 1 1/2 cups chickpeas or white beans (1 can, drained and rinsed) (250g after draining)
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • heaping 1/8 tsp salt
  • 3/4 cup brown sugar* (See note below)
  • 1-2 tsp vanilla extract
  • 1/4 cup ground flax (20g) (see nutrition-info link below, for substitution ideas)
  • 1/4 cup peanut butter (or other fat source) (see nutrition-info link below, for lower-cal options)
  • optional: 1/3 cup chocolate chips (Not “optional” if you’re CCK!)
Preheat oven to 350 degrees. Blend all ingredients (except chips) until very smooth in a food processor (not a blender). Mix in chips, and scoop into a greased (or tinfoil-lined) 8×8 pan. Bake for 38-40 minutes. You want the blondies to look a little undercooked when you take them out, because they’ll firm up as they cool, and you don’t want them to get hard.
